Healthy ramen in just 30 minutes!

I am a massive fan of meals that don’t take hours to cook, because let’s be honest, who has the time or energy for hours of cooking on a daily basis?!  

So here we have a super healthy and DELICIOUS chicken ramen 😍 This was prepared, cooked and on the table within 30 minutes! Healthy meals DO NOT have to be super time consuming! 

This recipe made two servings and was so filling!! ✨



Ingredients- 

🔸2 chicken breasts 

🔸Pink Himalayan salt and freshly-ground black pepper, to season

🔸2 tsp olive oil 

🔸2 tsp fresh ginger, crushed

🔸3 tsp fresh garlic, crushed

🔸3 tbsp low-sodium soy sauce

🔸2 tbsp mirin

🔸4 cups rich chicken stock

🔸 1/2 cup of fresh shitake mushrooms 

🔸1/2 cup spring onions, sliced

🔸2 packs of bare naked noodles OR 2 nests of egg noodles

*side note- It was the first time I had tried the bare naked noodles, they are very low in calories so thought I’d give them a go! I like them but they won’t be everyone’s cup of tea as they are a bit of a funny texture! They have very little taste so great for a ramen that has lots of flavoursome broth!!

Method- 

🔹 Cook the chicken- Season the chicken with salt and pepper before adding it to a frying pan, slighty brown on both sides. Once the chicken is browned on both sides put it onto a baking tray and bake for 15-20 mins

🔹 Making the broth- While the chicken is cooking you will move onto the broth! Heat the oil in a large pot over medium heat. Add the garlic and ginger, and cook for a few minutes until softened. Add the soy sauce and mirin, and stir. Add the stock, cover, and bring to boil. Remove the lid, and let simmer uncovered for 5 minutes, then add the mushrooms. Simmer gently for another few minutes, season with salt, to taste. (I didn’t add any more salt as I didn’t think it needed it) 

*Remember to check the chicken! Once the chicken is cooked through take it out of the oven and set it to the side to while you finish preparing everything else!*

🔹 Once the broth was made I actually just added my noodles to the broth to cook, but you can also just put your noodles in a separate pan of boiling water and let them cook while you’re making the broth! It’s completely optional! 

🔹 You should now be ready to assemble your bowls! I always put the noodles and broth in first, then the mushrooms, then slice and add the chicken, finally add your sliced spring onions!!
