Healthy Lasagne Recipe

I am a massive fan of making traditional meals ‘healthier’ because who doesn't love a good lasagne or shepherds pie right?! This way i NEVER feel like I'm missing out or restricting myself, its all about making the right choices with ingredients and once you learn how to do that, NO meal is off limits!! 

Low carb lasagne 😍 

This makes 4 big portions and is around 340cals each ✨ Served with a side salad this makes the PERFECT dinner!

Filling:

🔸400g lean beef mince (5% fat) 

🔸1 white onion 

🔸1 tbsp tomato purée 

🔸1 tbsp oregano 

🔸100ml beef stock

🔸500g passata

🔸1 garlic clove 

🔸250g butternut squash sheets 


Topping:

🔸80g half fat mozzarella 

🔸light cheddar (I use sainsburys ‘be good to yourself’ cheddar)

Sauce:

🔹150g lightest Philadelphia cheese

🔹30g light cheddar (I use sainsburys ‘be good to yourself’ cheddar)

🔹50g 0% fat natural yoghurt 

🔹season with pepper 

🔹add skimmed milk for desired consistency


Method:

  1. Cook onion until its soft (I use a couple of sprays of the olive oil fry light but you can use a teaspoon of normal olive oil)

2. Add the mince and let it brown 

3. Add all the other FILLING ingredients and let it cook for 15mins 

4. Mix together all of the cheese sauce fillings in a separate pan on a low heat until it’s all melted 

5. Layer half the mince then half the butternut squash sheets then half the cheese sauce filling and repeat 

6. Finish off my adding toppings

7. Cook at 180 degrees for 40 mins
